Fragrant biryani... delectable kheers and kulfis from the kings of Iran and Spain to the Mughal’s of Delhi to the Nawab’s of Lucknow. How they loved the delicate flavours of the world’s most expensive cooking ingredient saffron. Grown here in India, in the small cultivated fields of Lethpora village around Pampore, on the drive to Pahalgam, saffron has a short season but the fruits of its sales, worth their weight in gold, are infinitely sweet. It would take 150 flowers to create just one gram of saffron, from the plucked pistil threads from the mauve-coloured saffron crocus. The saffron is harvested in the autumn (harud), when everyone who can is roped in to do the work of plucking off the three thread like sticky red stigmas (found in each flower) by hand more quickly. This is a very delicate job which also requires careful processing to get the best results and not waste a single precious thread by doing it wrong. All parts of the flower are used in saffron production. You can buy saffron whichever grade (mogra, laccha) suits your pocket at the local shop here.
